STUFFED TOMATOES WITH SHRIMP
- 500g grey (bay) shrimps
- 8 large tomatoes
- 1 shallot
- Home-made mayonnaise
- 1 lemon
- ¼ bunch parsley, chopped
- Salad leaves (e.g lettuce) to garnish
Chop the parsley.
Chop the shallot.
Wash the tomatoes.
Remove Hollow out the tomatoes using a teaspoon. Turn each tomato upside down to drain out any remaining juice.
Mix the shrimps, with 4 heaped tbsps mayonnaise, 2 tbsps chopped parsley, ½ of the chopped shallot and a few drops of lemon juice. Season with salt and pepper.
Spoon the mixture into the tomatoes and replace the reserved ‘lids’.
Serve on a bed of lettuce leaves.
