CLAMS WITH PRESERVED LEMON
The ingredients
- 800g clams
- 1 preserved lemon
- Juice of 1 lemon
- 40g butter
- 1 bunch coriander, finely chopped. (Reserve 4 sprigs as garnish)
The recipe
Wash the clams in a large bowl of salted water to remove any sand Place a large pan over a high heat and tip in the clams. Cover and leave for 5 mins, shaking occasionally to open the clams.
Drain the clams and reserve the clam juice.
Dice the preserved lemon.
Peel and finely chop the onion.
Melt the butter in a casserole dish and brown the onions. Add the diced preserved lemons, the reserved clam juice, 15cl water and the chopped coriander.
Simmer for 5 minutes.
Add the lemon juice and clams. Re-heat for a few moments.
Arrange on a serving dish garnished with the reserved coriander sprigs.
