PIZZA
The ingredients
- Olive oil
- 2 red onions
- 4 tomatoes, chopped
- 1 aubergine
- Black olive tapenade
- 4 slices dried ham
- 1 preserved lemon
- 200g flour
- 150 ml water
- 80ml olive oil
- 6g fresh yeast
- Salt and pepper
The recipe
Combine the flour, water, olive oil, yeast and 4g of salt to make a smooth dough.
Place in a spring-form tin and leave to rest for 15 minutes
Chop one of the red onions and brown in olive oil. Add the tomatoes. Season and cook for 20 minutes.
Blend and set aside.
Quarter the second red onion. Season with salt and pepper, and fry gently in olive oil for 15 minutes. Fry the aubergine in a separate pan.
Bake the pizza dough in a warm oven for 12 minutes.
Spread the baked pizza base with the tomato sauce. Add a little tapenade, the aubergine, onion, ham slices and a few pieces of preserved lemon.
Serve immediately.
