GUACAMOLE
The ingredients
- 2 ripe avocados
- 1 lemon
- 1 onion
- 1 clove garlic
- 1 tomato
- 4 sprigs coriander (or parsley)
- 2 tbsps crème fraîche
- 1 tbsp Mexican spice (Tex-Mex seasoning)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 dried chilli (to taste)
- 1 tsp white pepper
- 1 tsp black pepper
- 1 tsp salt
The recipe
Halve and stone the avocados and scoop the flesh into a food processor.
Add the juice of the lemon.
Skin and de-seed the tomato, peel and chop the onion, garlic and coriander.
Pulse all ingredients together. (If you don’t have a food processor, chop the ingredients very finely and combine).
Chill for at least one hour before serving.
