RED BERRY MUFFINS

The ingredients

  • 200 g flour
  • 150 g caster sugar
  • 2 eggs
  • 120 g butter, melted
  • 1 pot natural yoghurt
  • 1 sachet baking powder
  • 200 g mixed red berries
  • 3 tsps sugar to sweeten the fruit 

The recipe

Pre-heat the oven to 180°C.

Wash and drain the berries. Sweeten with the 3 tsps sugar.

Combine the caster sugar with the eggs. Add the flour, baking powder, salt, yoghurt and melted butter.

Whisk together.

Grease a muffin tin with butter and fill each cup half-full of muffin batter. Place a spoonful of the prepared red berries in the centre of each, then top with the rest of the batter.  

Bake for around 20 minutes at 180°C.

The muffins should be golden and well-risen.

Check they are fully cooked by inserting the point of a knife.
